To cook floury potatoes, start by peeling and cutting the potatoes into evenly sized pieces. Place the potatoes in a pot and cover them with cold water. Add a pinch of salt and bring the water to a boil. Once boiling, reduce the heat to a simmer and cook the potatoes for about 15-20 minutes, or until they are tender when pierced with a fork. Drain the potatoes and let them sit for a few minutes to allow excess moisture to evaporate. Then, mash or use them in your desired recipe. **

Floury potatoes and onions can be used to make a delicious potato and onion soup. Simply sauté the onions in a pot, then add diced floury potatoes, broth, and seasonings. Let it simmer until the potatoes are tender, then blend it to your desired consistency. You can also use floury potatoes and onions to make a classic potato and onion gratin, by layering thinly sliced potatoes and onions in a baking dish, covering them with cream, and baking until golden and bubbly. Lastly, you can use them to make homemade potato and onion pierogies, by mixing mashed floury potatoes and sautéed onions as a filling for the pierogi dough. **

It can be difficult to find floury potatoes because they are less common than waxy potatoes. Floury potatoes have a higher starch content and lower moisture content, which makes them ideal for baking, mashing, and frying. However, they are more delicate and prone to bruising, so they are not as widely available as waxy potatoes. Additionally, floury potatoes are often in high demand for making products like potato chips and fries, which can make them harder to find in grocery stores for home cooking. **

To determine if a potato is waxy or floury, you can look at the skin and texture of the potato. Waxy potatoes have a thin, smooth skin and a firm, moist texture, making them ideal for boiling, roasting, and using in salads. Floury potatoes, on the other hand, have a thicker, rougher skin and a dry, mealy texture, making them great for mashing, baking, and frying. You can also ask your grocer or farmer for specific potato varieties that are known to be waxy or floury. **

Floury potatoes, such as Russets, are generally preferred for making French fries because they have a higher starch content and lower moisture content. This results in a crispier exterior and fluffy interior when fried. Waxy potatoes, like red or new potatoes, have a lower starch content and higher moisture content, which can result in a denser and less crispy fry. Therefore, it is recommended to use floury potatoes for making French fries. **
